Enjoy this popular quick and easy-to-make dinner from Ed's Soup Shack! Serves 4-6.

You'll need:
-1 package of Kuku Paka mix
-2 chicken breasts, chopped (or one can of chickpeas)
-2 cups or one can of coconut milk (may use low-fat if desired)
-1 Tbsp lemon juice
-1 389ml can of diced tomatoes

To make:
Heat 1 Tbsp oil in large pan or dutch oven. Brown chopped chicken - does not need to be cooked all the way through. Add water, Kuku Paka Mix, and diced tomatoes. Stir and simmer for 30 minutes until vegetables are tender.
Meanwhile, cook rice (included) in 3 cups of water for 14 minutes. Remove from heat and let rest for 5 minutes.
When Kuku Paka is ready, stir in coconut milk. Simmer and stir gently until sauce thickens. Stir in lemon juice (optional). 
Serve Kuku Paka over rice or mix together.

Ingredients: white rice, mixed vegetables, MSG-free chicken bouillon (salt, sugar, maltodextrin, cornstarch, vegetable fat, spice, wheat flour, dehydrated garlic and onion, autolyzed yeast extract, parley, spice extract, gluten), spices, curry.
